Fettuccine with chicken in a tomato and creamy almond sauce

One of the first dishes my boyfriend made for me was this Red – White Pasta. Almonds in the pasta, woow, it was surprising for me. But with the first taste I was in heaven. It was so delicious. Later on we made it together for my family, our friends, etc. It is always a great success, you can not miss it.

These two sauces perfectly complement each other. Flavorful tomato sauce and simple, creamy almond sauce. Prepared chicken is very tender.

Ingredients

Tomato sauce

  • 2 shallots
  • 1 clove of garlic
  • 1 can chopped tomatoes
  • basil
  • bay leaf

Almond sauce with chicken

  • 250 g fettuccine
  • 30 g butter
  • 400 g chicken breasts
  • 50 g almonds
  • 2 dl cooking cream

Tomato sauce
Warm up some olive oil in a pot. Chop shallots in small squares. Fry for a couple of minutes or until onions are soft. Add garlic and fry for 1 more minute. Now add basil and afterwards chopped tomatoes. Season with salt and paper. Cover with a lid and let it simmer  for 30 minutes.

Prepare water for pasta. When the water is boiling add some salt and pasta. Cook pasta for a specified time on the bag. While the pasta is cooking prepare almond sauce with chicken.

  • 250 g fettuccine

Almond sauce with chicken
While the tomato sauce is cooking, prepare white sauce. Clean the chicken and cut into a small cubes. Season with salt and paper. Melt the butter in a pan. Add chicken and almonds. Fry on medium heat constantly mixing  for 7-8 minutes, or until chicken is lightly brown.  Add cooking cream and simmer for 10 minutes. It should reduce to half, so it is nice and thick. Taste and add more salt and pepper if needed.
  • 30 g butter
  • 400 g chicken breasts
  • 50 g almonds
  • 2 dl cooking cream
