If you need some comfort food, then this is definitely one of the dishes. For us it is like eating a candy.

Dish is inspired by Gordon Ramsey’s recipe. We prepare the dish with rice, as there is a lot of good sauce that rice can pick up. To make a good crispy mince, we use a blend of pork and beef. This way beef doesn’t dry out. Well, let’s jump to the recipe.

Ingredients
Crispy beef
- 500 g minced beef and pork
- 1 chili
- 1 tbsp ginger
- 2 cloves garlic
- 2 spring onions
- 1 tbsp sesame seed oil
- 1 tbsp lime juice and lime zest
- 2 tsp brown sugar
Sweet and spicy sauce
- 2 tsp brown sugar
- 4 tbsp soy sauce
- 1 tbsp sesame seed oil
- 1 tbsp olive oil
- 1 tsp fish sauce
- chili by taste
- 1 tbsp lime juice
- coriander
To serve

- Romaine lettuce

Warm the pan up and add 2 tbsp of oil, followed by minced beef. Break it up and fry it off. Keep the pan very hot while frying beef and give it a nice brown color. It needs to get crispy. Drain the beef to get rid of the access fat. This way mice will stay crispy. Set aside.
- 1 tbsp sesame seed oil
- 1 chili
- 1 tbsp ginger
- 2 cloves garlic
- 2 tsp brown sugar

- 2 spring onions

Warm the pan up again and add sesame seed oil. Now we need to fry chopped chili, ginger and garlic. To caramelize it add sugar. Return the mice in and add fish sauce, lime zest and a squeeze of lime juice. In the end add spring onions cut in thin circles.
- 85 ml milk
- 300 ml double cream
- 35 g sugar
- 1/2 vanilla pod
- 2 gelatine leaves

Mix all the ingredients together.
- 2 tsp brown sugar
- 4 tbsp soy sauce
- 1 tbsp sesame seed oil
- 1 tbsp olive oil
- 1 tsp fish sauce
- chili by taste

Serve the mince on top of the rice, or wrapped in the Romaine lettuce.
