Ingredients
- Noodles
- 2 heads Romaine lettuce
- 3 green onions
- 1 cucumber
- 1/2 pineapple
- Fresh cilantro and basil
- 1 avocado, sliced
- Roasted peanuts
Jalapeño Peanut Sauce
- 30 ml sesame oil
- 30 ml rice vinegar
- 30 ml creamy peanut butter
- 3 tbs soy sauce
- 1 tbs honey
- 1 tbs Thai red curry paste
- 1 lime, juice
- 1 jalapeño, chopped

- chicken or pork cubes

Cook the rice noodles according to package directions.

In a large salad bowl, combine the lettuce, green onions, cucumbers, pineapple, cilantro, and basil. Add noodles and if you have from day before chicken or pork. Sprinkle with peanuts.

To make the peanut sauce. Combine all the ingredients in small sauce pen. Warm it slowly up. Pour the sauce over the salad, tossing to combine.
