Sunday morning, smell of fresh bread and oatmeal rolls on the table… These delicious buns were baked off early in the morning. Cold and rainy weather outside was a perfect time for baking. The air at home was heated up with the warmth from the oven while the smell of fresh bread was spreading in the air.

Whenever I made these rolls for breakfast back at home, in Croatia, they disappeared in seconds. The good thing is that you do not need great baking skills to make them. The process is easy and fast. The result is healthy, fluffy and delicious buns.

First time I enjoyed them was at a skiing vacation in Austria. I joined my boyfriend and his family on a great vacation. Long ski days could be exhausting, so a good breakfast is very important. In the evening, after a long day spent in the mountains, Danish mom drew back into the kitchen and started preparing morning bread for us. When I noticed that there was movement in the kitchen I got up immediately to see what it was all about. All the ingredients were already in the bowl. The dough was resting in the fridge over night. Buns were freshly baked next morning. Kids loved to eat them with Nutella, but any other spread tastes delicious too.
I was not so comfortable to ask for the recipe, so when I came home from vacation I spent some time figuring out the recipe myself. My only clue was that it contained oatmeal. I stumble on couple of different recipes, so I started mixing ingredients myself. And here it is, a great recipe for oatmeal rolls after many tries. I have been making these rolls over and over again.

Makes 10 buns
Time, preparation: 20 min, resting: overnight

Ingredients

For the dough

  • 250 g all-purpose flour
  • 100 g oatmeal
  • 70 g graham flour
  • 0.5 tsp salt
  • 20 g fresh yeast
  • 0.5 dcl milk
  • 0.5 tsp sugar
  • 2.5 dcl water

For brashing

  • water to brush

Measure the flours, oatmeal and mix them in a bowl together with the salt.
  • 250 g all-purpose flour
  • 70 g graham flour
  • 100 g oatmeal
  • 0.5 tsp salt

On the other side mix the yeast and sugar with the lukewarm milk.
  • 0.5 dcl milk
  • 0.5 tsp sugar

Add the yeast mixture to the first bowl with flours, oatmeal and salt. Add water. Mix with the wooden spoon until well combined. The dough should stay wet. Keep mixing for 5 minutes. Cover with the cloth and put overnight in the fridge.
  • 2.5 dcl water

In the morning take out of the fridge. Preheat the oven to 200°C. With the spoon grab balls of the dough and place on the baking sheet. Make 8-10 buns, depending on the wanted size. Put the try in the oven and bake for 10 minute on 200°C, lover the heat to 180°C and bake for 8 minutes more.

Serve them warm and eat with your favorite spread.
