Friday, not a big desire for cooking and a lot of leftovers from the week… A perfect idea came to our minds. Let’s wrap some stuff in delicious Turkish pita breads. I do not like to buy plastic wrapped bread, so I tried to make it myself. I can say it is quite simple, but tastes a million times better than the ones you will find in stores. Besides all that, it is made with only four ingredients and it is very fresh.

We had some leftover meat in the fridge, tomatoes, chilies, mixed salad, cucumber, bell pepper, Crème Fraîche, onions, garlic, fresh spices etc. The decision was made. We will chop the meat in the very thin pieces and fry it shortly on the pan with sea salt and fresh herbs. With tomatoes and chilies we will create chili sauce and to calm it all down, but to have the wrap nice and juicy we top if off with a little Crème Fraîche.

Makes4 pockets

TimePreparation: 15 min

Ingredients

Marinated meat

  • 300 g calf meat
  • 2 tbsp olive oil
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme
  • salt and pepper
  • union

Chili sauce

  • 100 g chili peppers
  • 3-4 tomatoes
  • 2 tbsp olive oil
  • 2 heads garlic
  • 1 shallot
  • 1 tbsp brown sugar
  • 1 tsp fish sauce

Pockets

  • 4 pita breads
  • meat
  • salad
  • cucumber
  • tomato
  • chili sauce
  • Crème Fraîche

Cut the meat in the thin, long slices. Marinate meat in the olive oil with rosemary, thyme, salt and pepper.
  • 300 g meat
  • 2 tbsp olive oil
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme
  • salt and pepper
  • 2 tsp brown sugar
  • bell pepper

Chop the union. Heat the pan with a little bit of olive oil and saute union. Add meat and roast for 2-3 minutes, without cover, then put the lid and roast for 5 more minutes or until the meat is lightly brown.

Chili sauce
Wash tomatoes and cut them in half. Rinse, clean and remove the chili stems. Mix all the ingredients in the blender and blend until smooth. Add to medium sauce pan and simmer chili sauce for 15-20 min.
  • 100 g chili peppers
  • 3-4 tomatoes
  • 2 tbsp olive oil
  • 2 heads garlic
  • 1 shallot
  • 1 tbsp brown sugar
  • 1 tsp fish sauce

To prepare your pita pockets cut half the pita bread. It is empty in the middle so you can stuff it with anything you like. This time we will put some salad, meat, cucumber, tomatoes, bell pepper, chili sauce and creme fresh. Enjoy this delicious wrap 😀
