Simple Enchiladas

After a great vacation in Italy and tasting all kinds of pastas and pizzas it is good to be back to prepare your own meal. Of course it has to be a little bit different then what we got for last couple of days. So we decided to make a Mexican dish.

Enchiladas is an easy dish to prepare, but if you are making homemade tortillas it could take some longer time. I love homemade tortillas, they taste amazing. I one of the next posts I will give you some tricks how prepare great to tortillas at home.

Makes4 portions

Time
Preparation and cooking: 1 h 30 min

Ingredients

  • 500 g chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp red paprika
  • 4 tortillas
  • 1 red pepper
  • 1 green pepper
  • 100 g corn
  • 2 tbsp tomato paste
  • 250 g cheese (Gauda)
  • creme fraiche
  • salad and fresh tomatoes
  • 3 tbsp chive

Prepare chicken breasts, cut it into small cubes. Let it marinade in red paprika and a table spoon of olive oil.

  • 500 g chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp red paprika

In the mean time prepare the vegetables. Cut the peppers in small strips.

  • 1 red pepper
  • 1 green pepper

Warm up a deeper pan. Add some oil and fry the chicken for around 15 min under the lid. This way chicken will keep all the aromas and it will stay tender. Add peppers and after 5 min add corn. Mix it well together. Add tomato paste mixed with a little bit of water, salt and pepper. Let it simmer for 5 min.

  • 100 g corn
  • 2 tbsp tomato paste

Slice in small peaces. Mix it with creme fraiche.

  • 3 tbsp chive
  • creme fraiche

Fill tortillas with the chicken mix. Add some chicken mix in the center of tortillas and top with a tsp of creme fraiche and grated cheese. Roll tortilla to make an enchilada, as a pancake leaving the edges open. Place enchilada in the oven proof dish and repeat the process with the rest. Top tortillas with the creme fraiche mixture and rest of grated cheese.

Bake in the oven for 20-30 min, or until the topped cheese gets nice golden color. Prepare your salad.
