There are some recipes that we have in our little recipe book as they are fast, simple and require few ingredients. One of them is this simple Yogurt and Lemon Buckle. Cold winter months, without much big variety of fresh fruits seem perfect to bake this buckle.
“FAST, SIMPLE AND REQUIRES FEW INGREDIENTS!”
If you are wondering what the buckle is. Buckle is basically like coffee cake but a bit denser in texture. I prepared one with lemon zest and juice. I believe lemon ads great freshness and a little bit of good sour taste.

- 125 g Greek yogurt
- 50 ml vegetable oil
- 3 eggs
- 125 g sugar
- 1 lemon juice and zest
- 200 g flour
- 2 tsp baking powder

Start by warming up the oven to 180°C. In a medium bowl mix together the yogurt, oil, eggs, sugar and lemon in a medium bowl. Cream all the ingredients together at medium speed until smooth and slightly fluffy.<\p>
- 125 g Greek yogurt
- 50 ml vegetable oil
- 3 eggs
- 125 g sugar
- 1 lemon juice and zest

Add flour and baking powder to the above mixture. Slowly incorporate all the ingredients.

- 2 tsp baking powder

Grease and lightly flour an 8-inch cake pan and line the bottom with a circle of parchment paper.

Pour the batter into the prepared cake pan. Bake for about 45 minutes, or until the top of the buckle is golden and a toothpick inserted into it comes out relatively clean. Remove from oven and allow to cool for 20 minutes before slicing and serving. Enjoy!!!
