Finally our recipe for incredibly delicious, pulled pork burgers, together with fresh coleslaw and a little bit of barbecue sauce to spice it all up. It is nothing you have tried before. The story about the origins of pulled pork is quite interesting. During the civil war in Southern States of America, while rich farmers used the good parts of the pork, slaves would get cheap and thought cuts. They learned to slowly cook these parts over coal and were typically so hungry that they would pull the pork from the coal when the meat was soft and so tender it almost falls off the roast.
We bought quite a big peace of pork neak fillet for slow roasting which was a perfect opportunity to invite people over and share the great food. One of our first Airbnb guests from Brazil came over with a friend. He was quite excited to see what this great dish was all about. Also many of us from southern countries, including me, have not tasted pulled pork before. But once you do, you will love it. Another friend who is growing his own chilies brought an extreme spicy pure chili extract – That was GOOD 🙂
Pulled pork is great food when you want to invite many people over for a nice and cozy day out in nature, as you can make a lot of it with an inexpensive piece of meat. Or you can prepare it in advance and just serve it in the coziness of your home. The long, slow method of cooking makes the pork tender, juicy and incredibly flavorsome. Hopefully you are now convinced, so let me give you some instruction.

Ingredients
Pulled Pork
- 1 kg neck fillet
- 1 whole garlic
- 2 onions
- 1/2 l water
- salt and pepper
Coleslaw
- 4 carrots
- 1 cabbage
- 1 tsp Dijon mustard
- 1 dl apple vinegar
- 1 tsp cane sugar
- 1 tsp ground cumin
- 1 tsp crushed coriander seeds
- salt and pepper
- 2 dl cremefraiche
- 4 tbsp mayonnaise
- 1 tsp sugar
- salt and pepper
Barbecue sauce
- 2 dl olive oil
- 1 dl ketchup
- 4 tbsp brown sugar
- 4 tbsp soy
- 4 tbsp apple vinegar
- 3 cloves garlic
- 1 chili
- 10 g fresh ginger
- 1 tsp ground cumin
- 1 tsp crushed coriander seeds
- salt and pepper

To roast it in the oven prepare a ovenproof dish. Season the neck fillet with salt and pepper. Cut the onion and garlic in bigger chunks and spread in a dish. Place the fillet on top. Pour the water by the neck roast. Place in the oven at 110° C for 9 hours or until it reaches 95° C. After 4 hours pour the water from the dish over your roast.

When cooked cover with a foil and leave it to the roast rest for 30 minutes. Shred the meat into pieces with two forks.
It can also be made on the grill, but it requires you to keep your grill at 110 ° C for 9 hours.

Grate the carrots. Finely cut the cabbage and mix in a bowl together with carrots. For the marinade add Dijon mustard, apple vinegar, cane sugar, ground cumin, coriander seeds (roasted on pen and crushed), salt and pepper. Combine all the ingredients together with carrots and cabbage. Let it soak for about 1 hour in the refrigerator.

- 1 tsp Dijon mustard
- 1 dl apple vinegar
- 1 tsp cane sugar

Prepare dressing. Combine all the ingredients and season with salt and pepper. Take out the marinated carrots/cabbage mixture and strain well through a seed, removing almost all excess liquids. Add dressing and mix well. Store in the fridge.

- 1 tsp sugar

Place all ingredients into a saucepan over medium heat. Bring to the boil, stirring constantly, then turn the heat down to low and simmer for 5 mins until thickened slightly.

Prepare you pulled pork burger. Mix barbecue sauce in pulled meat. Top the soft burger bun with a sliced tomato, coleslaw and pulled pork. Enjoy you meal!!! 😀
